Since 1984 these have been strictly regulated in Alsace. Chaptalisation is prohibited and the wines may not be sold until 18 months from the date of picking the grapes, after thorough complete analysis and organolectic tests.
These are exceptional wines that symbolise the patience of wine growers in exceptional climatic conditions and that permit the selection of very ripe and especially botrytised grapes (noble rot).

Usually, the grapes are selected and picked on one day in the middle of October. The wines have the aromatic complexity and great intensity that enables them to be kept for 15 or 20 years.
